Simple Summer and Lemon Cherry Shortbreads

Summer, how I love summer. I love how fresh, clean and simple this season is. Maybe it’s because I am a summer baby myself (thanks Mom!). I love how everything takes less effort – no boots or mitts. Simple meals. Just get up and go.

I love the longer days and sunshine. The beautiful surgance of flowers – and of course the symphony of music from the birds.

Keeping with simple and fresh, I have a simple but delicious cookie recipe to share with you – Lemon Cherry Shortbread Cookies. I love making these in the summer! You just have to try them for yourself! Here’s what you’ll need:

Lemon Cherry Shortbreads

- 1 cup butter

- 2 cups flour

- ½ cup + 1 tbsp. icing sugar

- Dash of salt

- Zest of 1 lemon

- ¾ cup of chopped dried cherries

- Mix all the ingredients together in your mixer

- Roll into a log shape, on parchment paper and chill

- Slice into ½ inch portions and bake at 350 degrees for about 8-10 minutes

- Cool on cooking rack then dust with icing sugar
